On Thursday we visited the Cass County Health Department in Virginia. Greg Seiders, Director of Environmental Health, spoke with us about food safety and cottage food requirements. He discussed potentially hazardous foods and why and how they become hazardous. We were intrigued by the information regarding what doesn’t actually need refrigerated and use by/sell by/best by dates.
When it comes time to start individual businesses, several of the students plan to produce items that will require a cottage food license and certified food manager certificate. We appreciate Greg taking the time to explain the process to us.
